Facts about process technology
First of all purchase good quality of spices from
the market, clean it with the help of Cleaning
Machine with proper Aspiration System. After cleaning
you clean it with De-Stoning machine for separating
stone, glass pieces or any other metal parts or
any other foreign matter. You can pack whole spices
in case moisture is perfect i.e., less than 10%.
If it greater you can remove the moisture with
the help of drier at a low temperature as low
as possible.
Grinding
Process
You know there is volatile substance in all the
spices, which is the strength of every spice.
These volatile substances start evaporating at
a temperature more than 30°
C.
More the volatile substance evaporates strength
of the spices become less (faint). So, it is suggested
to grind the spices at a very low temperature.
So that volatile substance should intact.

By grinding from this process:

Temperature
of the grinded material goes to 70° C
- 80° C, when you grind the spices at
this temperature most of the volatiles substances
evaporate. So your product becomes very inferior
without any cause. |

Second
effect is that when the grinded material goes
to 70° C - 80° C we have to cool down
the temperature of material at room temperature
before packaging in the packing room. In this
process spices absorb the moisture form the
room and oxidation start at the same moment. |

to that Shelf life of the Spice becomes less
to avoid that always use De-humidifier in
the Packaging Room & avoid grinding by
low technology Pulverizer. |

Points
to be remember during process of Spices & Herbs:

and oleoresin, which are intact at lower temperature
only. Volatile substances evaporate when you
grind the material at higher temperature. |

Oxidation
start when the material comes in contact with
air at higher temperature than the room temperature. |

For
Spices & Herbs grinding the acidic value
of spices & herbs will react with the
ferrous particle of grinded media and oxydised
ferrous will be mixed with grinded material
and our material can be rejected in the International
Market. |

Do
not grind the spices when moisture content
is high it will reduce the Shelf life of material. |

Mainly
in all spices 5 to 7% is oil and oleoresin
only is fibre. There is no value for fibre
in Spices & Herbs. |
